Cardiac Potatoes
Just like the Cardiac Cardinals of yesteryear, these mashed potatoes are stunners. Yes, it's Thanksgiving, so time for something a little different.
Also like the old Cards, these Cardiac Potatoes can be unhealthy on a regular basis, as you'll see by the ingredients. But as you enjoy the new Cards with friends and family (prediction: they will trounce those other birds from Philly), serve these and count the OMGs you get back.
Guys, you can do this, and impress the hell out of people.
This recipe serves 8. Do the math accordingly.
9 large baking potatoes
1 stick of unsalted butter at room temp
12 ounces cream cheese at room temp
3/4 cup sour cream
1/8 teaspoon of nutmeg
1/2 cup of breadcrumbs (you can buy these).
Chopped green onions, salt and pepper to taste
Bake the potatoes fully in a 350-degree oven (about an hour).
Scrape out the meat of the potatoes into a mixing bowl.
Add butter, cream cheese, cut up into smaller chunks.
Blend fully with a mixer.
Stir in everything else except the bread crumbs.
Grease the bottom on a baking dish with butter and pour in the mixture.
Sprinkle bread crumbs on top.
Either cover and refrigerate for baking later, or bake immediately and serve. If cold, potatoes should be baked uncovered for approx 45 mins, or until hot.
